Working on this 1,5 Kg "Marjaler" bread inspired by my girlfriends family rice trading tradition in s'Albufera, Mallorca.🌱 Indigenous high extraction "Mollar" wheat, whole wheat Xeixa, cooked and prefermented "bomba" rice, levain and 20h hours of room temperature proofing.
Dark bake, great caramelization, soft crumb and sweet flavours from the cooked rice.
