Some like Thandai hot,some like it cold. Thandai is a Indian drink mix made of different Dryfruits, saffron and rose petals. There are variations to the traditional Thandai mix. It's one of the Traditional festival drink associated with Holi that marks the start of Spring ,changing seasons. While I dearly miss the Holi Celebrations with my family. I tried a few recipes from my Moms kitchen. Instead of Thandai milk, I made delicious kulfi using the same ingredients. Also thanks to my dear friend nalini.9 for reminding me of Thandai( I completely forgot it ). Recipe for Thandai Kulfi Servings 6 Ingredients Milk 500 ml Khova 1/4th cup Pinch of Saffron strands Sugar 1 cup Rose water 1 Tsp Almonds 1/4Th Cup Cashew nuts 1/4Th Cup Melon seeds 2 Tsp Poppy seeds 1 Tsp Fennel seeds 1/2 Tsp Pine nuts (Chironji) 1 Tsp Cardamom powder 1/4 Tsp Procedure 1.In a heavy bottomed pan, spread nuts,fennel seeds and poppy seeds in an even layer and heat over medium flame. Keep stirring until nuts are fragrant and browned.(This process gives a distinct fragrance). 2. Set them aside and let cool. Post that grind them to coarse texture. 3. Pour milk in a bowl and give boil over medium flame. For kulfi we need thick consistency hence it takes around 25 to 30 minutes. 4.Add sugar,saffron strands and cardamom powder and stir. 5. Mince khova into small bits and add to the milk and mix well. 6. The milk will become thick and change to light brown color. 7. Add the dry fruits mix to milk. Let it boil for another 5 minutes. 8. Switch off the flame and let the kulfi mix cool down. 9.Pour the rose water into the kulfi mix and stir. 10. Now you can fill the kulfi moulds and freeze for 4 hours. Also if you don't have moulds then paper cups can be used or even small serving balls can be used to make kulfi. 11. Once kulfi is frozen, take them out of freezer and let it sit for 5 minutes. They will come out easily perfect shape. 12. Enjoy your Holi with these Thandai Kulfi 😇 *Notes : Khova can be avoided and fresh cream(1 cup) can be used.
