CHOCOLATE, PEAR AND BIRCH CAKE: DAIRY FREE ICING
A lovely customer asked for one of my chocolate, pear and birch cakes but requested a dairy free icing. I didn’t know this but some dairy allergy suffers can eat cooked dairy but raw/uncooked dairy contains casein which is the allergen. However, once it is cooked the casein breaks down and therefore is no longer problem. I made a ‘vegan fudge’ icing and oh my, I could have just eaten the icing is was sooooo good!
So I made a chocolate sponge cake, soaked and filled with homemade pear butter, covered in a dairy free icing and adorned with dried pear slices and a dairy free chocolate sail.
Using a selection of local, seasonal, organic, fairtrade and homemade ingredients. I used the local flour from mungoswells , local free range eggs from brandeastfortune , Scottish butter from grahamsthefamilydairy , organic and/or fairtrade sugars and cocoa powder from sumawholefoods , 70% dark chocolate from choctreescotland , homemade pear butter using pears from phantassieorganicproduce , nut butter from wholeearthfoods , birch syrup from birchnorthpennine
