I love this analogy that beaheartdesign uses in her cute illustration here. Spiritual practices are like a recipe to a cake. You don’t always have to understand and decipher every single ingredient to be able to make a cake. You just need to know what the key ingredients are, the right amounts and FOLLOW THE PROCESS. Yes, “follow the process” and keep going. Over time, everyone can be a good little baker with the right ingredients and process I’m currently on this wave right now. Just “following the process” just like I’m baking. Truth be told, I’m a terrible baker. Talent-lacking aside, it’s probably because I lack the requisite patience to “follow the process” P.S. ok, if you’re in to minutia of details, praying the rosary is not in my key ingredient. This is what I called a Delicious and Perfect weeknight dinner Monday’s are always tend to be the hardest. Beginning of the week with a long list of things to do. And really a very little time to cook dinner If your Monday’s are anything like mine than you are going to love this amazing Chicken with mushrooms and asparagus 👌🏽😋. The picture does not do justice to how good this tastethe juicy/tender chicken with a layer of creamy mushrooms and asparagus delicately cooked together for an explosion of flavors is just mouthwatering😋😋. And the best part is dinner was done in less than 30 minutes😊 Definitely check out the recipe and try it😘 Ingredients 4-5 Chicken Breast 1 small onion finely chopped 4 cloves of garlic finely chopped 1 cup of mushrooms (sliced) 1 cup of asparagus (cut 1 inch pieces) Salt & pepper to taste 1 tsp of Garlic powder 1/2 cup of plain yogurt 1 tsp of Italian seasoning 2 tsp of lemon juice 1/2 cup of chicken broth Preparations 1. Preheat the oven to 350 2. While the oven is heating in a bowl add the chicken breast, garlic powder, salt and pepper, lemon juice, yogurt and Italian seasoning and mix it well 3. Marinate the chicken for 10 mins and put it in the oven for 20 mins 4. In a pan heat up olive oil and sauté garlic and onions 5. Add the mushrooms and let it soften 6. Add the asparagus and the broth and let it simmer for 3-4 minutes 7. Take the chicken out of the oven and place in the pan with the mushrooms and asparagus. 8. Step back. I have always been an involved mom. I want to be at every event, big or small. It wasn’t until I realized my oldest daughters severe separation anxiety and strained relationship with her dad that a questioned if this was the best for her. My involvement did not cause her to anxious but it possibly gave her less opportunity to feel strong on her own. Dinner was awesome thanks to angelicbakehouse 🤩 These sprouted 7 whole grain hamburger buns are so so good and are packed with 30 g whole grains and 8 g of protein. Make sure you give them a follow and try out their products! Dinner tonight was a turkey burger inspired by the run fast cook fast eat slow cookbook! Secret ingredient is almond flour, highly recommend trying it out sometime! Also roasted some sweet potatoes with the recipe from the same cookbook. I know, I know. I missed taco Tuesday. But I’m a firm believer that tacos can and/or should be eaten everyday for optimal health 🙃 brekkie tacos dessert tacos these bbq tempeh tacos because these were way too good & SO quick & easy. Also if they’re not a pile of gloppy mess, I don’t know if they’re technically tacos ;) but in all seriousness, you guys have to try these. I’ll be sharing my home made bbq sauce soon but you can always use anything you have on hand! - 🌿 I just crumbled lightlifefoods tempeh in a pan & cooked until crisp. Then added a couple tbsp of bbq sauce & sautéed a couple minutes longer.
