Mad healthy kale, spinach and pea soup.
This soup is super easy to make, great for a week night. Will take no more than 20 minutes start to finish, and there’s very little washing up. Oh and also, it’s bloody good for you.
Bag of kale, cup of peas, half a bag of spinach, quarter of an avocado, handful of cashews, one squeeze of a lemon, 1 clove of diced garlic, tiny bit of grated ginger and salt/pepper to taste.
Simply put all ingredients in a blender and add two cups of water. Heat up slowly and you have a pucker soup.
To make it look funky, I put some cress, burnt garlic, spring onions and siracha on top. For the two tone, an avocado puree (1/8 of avocado, lemon juice, olive oil).
