“Food Requests: Sweet Potato Pie” * * * As requested by our son, Menelik. I use the Martha Stewart recipe that I always use, “sweet potato pie with pecan topping,” minus pecan topping. My version of this pie has a very special ingredient and I will tell you all about. The recipe calls for using maple syrup. I don’t know if there is any in CV, but where I am currently I’ve never seen it. Instead of using maple syrup I use Cape Verdean “MEL DE CANA.” Mel de Cana means “sugar cane honey.” It is sugarcane molasses, but it has a lighter texture and color than the molasses you may be used to seeing. I used it to make brown sugar for this recipe. Besides substituting for maple syrup, I also added a light layer of Mel de Cana over the top after the pie was done, which gave it this beautiful glossy finish. SWIPE to the last pic to see the molasses from another time I made pie. Unrelated but, my 4 year old asked me to “make pasta” yesterday so that’s the next food request I’ll be working on in a couple of weeks. Hot sauce I took a break today, because I had a busy morning, and made a simple and non-instagram worthy meal. But I did make hot sauce to post for you all. And later today I’m making pie crust for sweet potato pie tomorrow! My hot sauce has dried malagueta peppers, scallions, garlic, red scotch bonnets, and red and green malagueta. I was feeling a little creative so I threw in a sprig of dried rosemary. I looked but couldn’t find any fresh. I will let this infuse for 2 weeks. I’ve washed my hands a few times since making this and I still have hot peppers on my fingers. Which means it’s going to be a hot one. I can’t wait! * * * * *

Something really interesting happened today when I tried to pan sear this African fork tailed snapper. I had it cut into filets at the market when I bought it. When I went to sear it I placed it skin side up in the pan with hot oil. Everything was fine. When I went to flip it though instead of laying flat like salmon filet would, the snapper curled up and turned sideways in the pan! At first I thought my dish was ruined. Then I decided to take them out, cut them in half and put them back in the pan to see if they would stay flat. It worked! I was able to avoid a potential kitchen disaster and here we are. Pan seared teriyaki African fork tailed snapper with baked potatoes, carrot strips and zucchini which I seared without oil in a frying pan. Then I sautéed onions and tomatoes, added the potatoes, carrots and zucchini gave it a good mix and voilà! Bon Appetit. * * * * *

Today the spotlight is on my love and biggest culinary inspiration by far, Chef Joao. This dish was cooked 6 years ago in September 2012. It is an original dish of his own creation that he called “Ras Salmon Papaya.” The first picture is the finished product and the second picture is a process shot. As you see in the second picture, he baked the salmon INSIDE the papaya on low heat for a few hours, then he used the papaya as a serving dish adding rice and fries for the final presentation. How is that for creative plating guys? Even though all these years have passed I still remember this dish clearly and can you tell that it is the most delicious salmon dish I have had in my life. You can feel the passion that he has for cooking in every dish that he makes.
