Monday’s are hard, this muffin recipe is easy, ➕ you get three for one! 3in1muffinmagic PlainJaneMuffins 💚 HulkSmashMuffins 💚 CocoaLocoMuffins 💚 👉 INIGRIENDENTS: 1 egg or 1 flaxegg 1 ripe banana 2 large handfuls of organic spinach (omit for Plain Jane) 1 cup of quick oats 1 teaspoon of baking soda 2 pinches of pinksalt (or sea salt) 1/2 cup all natural (no sugar) peanut, almond or sunflower butter 1 cup of unsweetened organic applesauce 1/4 cup of cocoa or cacao (omit for Plain or Hulk Smash) 1/4 cup pure maple syrup or (local) honey 👉 DIRECTIONS: Turn oven to 375 degrees. Grease muffin tins or use silicone liners. Put banana, egg and spinach (if using) into your food processor or high powered blender and blend until well incorporated. Add oats, baking soda and salt, blend again using spatula to push down the sides. Add remaining ingredients in listed order and blend until smooth even texture is achieved. Use ¼ measuring cup to fill muffins and bake 20-25 minutes or until toothpick comes out clean. Move to cooling rack for 5 minutes. Then remove from tins and allow to cool to room temperature before storing. Enjoy warm, cold or slather with your favorite nut butter. Store in airtight container in the fridge for up to a week. Meatless Monday or Taco Tuesday?? These sweet potato, roasted poblano peppers and black bean soft tacos topped with my homemade chipotle sauce, checks both the boxes. A meal so simple but incredibly yummy and healthy. Top it with some sliced avocado and radishes for additional flavor and freshness. My family loved it and it is going to be a staple in house. Sweet potatoes and fajita veggies were pan seared and all the beans veggies were seasoned with my homemade fajita seasoning. I used the soft shell corn tacos (but you can use the flour tacos as well) and cooked them slightly on the stove top to give them a slight char and soften them. The sauce is made with sour cream, mayonnaise, chipotle peppers, garlic salt and a little bit of cumin. Everything I've been learning while going through this nutrition program has seriously made a massive difference with how I look at food 🍏. I noticed it just this weekend. The retreat coordinators asked every couple to bring snacks and drinks to share 🧁🥤. There was a table they set up for us to put all shared items on. Everything from Pringles, brownies, muffins, chips, popcorn, frito lay variety packs, cookies, cheetos, sodas, any kind of junk food you can think of made its way onto that table. Our contribution was water and nuts. We also packed our own snacks for ourselves (fruits, veggies, hummus, and shakeo) It was the first time where I caught myself not craving anything because I knew I had good food with me and in my mind I could make a healthier version of most of those snacks and treats at home. Now, did I eat a few wheat thins? Yes, did I eat half a brownie bite? Yes (half because that one bite was so insanely sweet I actually didn't like it 😂). Did I have an oatmeal raisin cookie? Yes (although it was hard to get through for the same reason I couldn't finish the brownie 🤣). I guess I did it for more nostalgic reasons. I hadn't had any of that in a long time so I really just wanted a bite. BUT THIS TIME, I was able to stop myself after that one piece, one bite, one whatever. I didn't keep going back like I normally would've 🙌! My body didn't want it! I also didn't find myself scrutinizing myself for the choices I did make like I typically would've. I had what I had, it was good, that was that To say this program has left me feeling empowered is an understatement 💖. The amount of confidence it's given me to live the lifestyle I want to live is insane. To think all I needed was the tools and knowledge to keep me from feeling confused, unsure, guessing, or left out 🤪. It's even given me the confidence to branch out from my routine and find new recipes to make that I would've never made before because I wouldn't have know how to work it into our meal plan. It is impossible to ignore the fact that the winter to spring transition in NL always involve cold winds and rainswhich I'm prepared for! Because I could always get the 'heat' from eating a well-made delicious food! Coming from Indonesia, I start to wonder why the Dutch VOC for centuries used to "source" their spices all the way across the ocean to Indonesia. No wonder, all these spices taste heavenly. It makes living in NL happier. Thanks to the farmers in Sumatra, with the ancestral knowledge and Midas touch, these level 4 white peppercorns warms my taste buds and gives a kick to all my foods. Here is a thank you note to all the spice farmers. You gave me a chance to experience exquisite delicacy from each bite of every serving. Monday’s Motivation: Food prep can be easier than you think and make a big difference in the week! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I think many of us have a perception of “food prep” as something we have to set aside hours for, but it doesn’t have to be that way! One of my most efficient methods is to take 20 minutes before the get home from school to wash, chop and mix anything that I can for that evening’s dinner. It amazing what you can get done in a short window and it makes putting the meal together at the end of a long day that much less overwhelming! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Posted here you’ll see some quick homemade coconut milk and fruit pops that I blended and stuck in the freezer this morning for the to have as afternoon snacks during the week. Simple foods.💫Why do you see pictures of people eating “mono meals” (a meal of all oranges or all mangos, for example) or simple meals with less than say, 5 ingredients per meal, while healing from various chronic conditions? Because simple is key while healing the body. Don’t overburden your digestive system with complex meals full of tons of different ingredients. This has been a challenge for me! Because food and cooking/prep is like art to me. I love creating beautiful meals. But simple is so good, especially with fruit! Fruit should always be eaten alone, away from other foods. And melons should never be eaten with other fruits. Just melons on their own, with nothing before or after for 30 minutes. You’ll notice such a big difference, especially if you’re someone who suffers from gut/stomach issues! You won’t get that bloated, full feeling, as if your body is struggling to digest. Stuffed Greek peppers Yummy 😋 we love stuffed peppers, so many different flavor combinations! These Super Greek stuffed peppers from mflriley look amazing 💜 Greek-style stuffed peppers; I made this same filling a few weeks ago, but did a vegetarian version with tofu and quinoa. This time, I browned some ground turkey with a chopped onion, a pinch of salt, and a generous amount of daksspices ”Super Greek” seasoning, then added some minced garlic and fresh spinach, and let that cook for a few minutes, until the spinach was wilted. Finally, I stirred in some cooked quinoa and a couple spoonfuls of low-fat Greek yogurt before stuffing into some halved, roasted peppers. A final bake in the oven, then a topping of creamy feta and toasted pine nuts. So delicious😋.
