Instapot beets are a great meal prep idea. I cut the bigger ones in half and just chop off the ends. Throw them skins and all into the pot with about a cup and a half of water. I use the trivet. Because these ones are bigger I high pressure them for 15 min and let them naturally release:) They peel easily after cooking as well.
