makotoyacafepk opened up their doors with their arms wide open for all the Japanese food lovers last Thursday and I must say, I was impressed! They had a huge variety of salads and main courses in their keto menu. My favourite salads were the seasoned tuna salad, wasabi basil prawn salad and the peppered beef salad All of these were filled with crunch and I could taste and enjoy each ingredient individually - refreshing and very healthy! There was also Timari sushi which was great too! The wasabi was also very good. The Maguro steak was a fish based steak which was exceptional! In chicken, Caraage chicken was crispy and fried. My daughters favourite from their healthy menu! What left me spellbound was their beef roast! My Lord, it was just perfect! Drooling for that even now! The beef itself was fantastic and the sauce was even better! In dessert, I couldn’t stop having whole grain crepes - they brought me so much delight! This could be your safest bet to stay guilt free! What I liked about this eatery is that they offer organic stuff even the coffee was organic! They also have a special section where they have organic beauty products up for sale. The chef and owner is Japanese and it makes the place completely authentic! 👍 Make sure you pay a visit and try it out! 富小路 やま岸 其の陸 ①Freshly cooked rice ②Grilled Kinki(rock fish)marinated with miso paste ③Special TKG(raw egg on rice) ④Persimmon with lime ⑤Chestnut bun ⑥Green tea さて、土鍋を火にかけて炊き上げられた艶々の煮えばなが運ばれて参りました。 山岸さんの煮えばなは本当に美味しいですね。 先ずは何も付けずに米の旨味だけを純粋に味わって楽しみます。 この白米のお供に出されて来たのはキンキの西京焼き。 脂のしっかりと乗ったキンキは超高級魚と言われているだけの事はあり、素晴らしい美味しさです。 ほんのりと味噌の味わいが移っている事で味わいが濃くなり、ご飯が更に進んでしまいます。 三杯目は定番のご飯のお供三種を全部乗せて卵黄を中央に据えた特製TKGにして楽しませて貰いました。 辛子明太子、縮緬じゃこ、そして柚子が香るなめ茸と何れ劣らぬ最高のお供です。 お腹も満腹になりデザートとして出されて来た水物は京都の名産品、代白柿。 この柿は上品な甘味が爆発しており、共に添えられたライムを途中でギュッと絞ると爽やかな味の変化を楽しめました。 御茶菓子は丹波の栗を使った山岸さんお手製の栗饅頭。 最後に志野茶盌でお抹茶を頂き全ての料理が終了です。 山岸氏は流石にお茶事を習っておられるだけの事はあり、料理構成は徹頭徹尾しっかりとした懐石料理のそれですね。 一汁三菜から始まるスタイルはいっそ古風とさえ言える程にクラシカルですが、その料理はどれも新しさと楽しさに溢れております。 茶の湯、茶道に於いてお茶を飲む前に食事を軽く楽しんでもらうというと言うところから始まった懐石料理ですが、この懐石というのは禅宗における温石(おんじゃく)から来ており、禅僧が懐に温めた石や蒟蒻を入れて暖をとっていた事に由来しております。 懐石料理の構成と言うのは飯、汁、向付、吸物、八寸、強肴(追肴、進肴、預け鉢)煮物、焼物、香の物、御茶菓子、お茶というのが大体の大雑把な流れですね。 因みに会席料理とは食事を楽しむ事を主として捉え、お茶事における懐石の料理のみを再構築しその構成や出し方、食材にかなり自由な幅を持たせた和食の事を指します。 ですが最近はその辺りの境界はかなり曖昧になっており懐石、会席、日本料理それに割烹といった名称はそのお店のスタイルに合わせて其々自由に名乗っておられる所が多い様ですね。 言葉としては"会席"が先で、これが禅の概念と結び付いて"懐石"に変わって定着し、改めて新しい"会席料理"という概念が誕生しているので、一概に会席を懐石と区別し切れないのがまたややこしい一因となっておりますが、まぁ、お茶事が絡むと懐石、それ以外が会席と大雑把に捉えておけば良いと思います。 そんな今どき珍しい程に正統派の懐石料理を出してもらえる山岸さん。 今回もご馳走様でした。 michelinrestaurant michelinstarfood michelinonestar michelinstarchef washoku kaiseki kyotofood japanesecuisine kyotogourmet steamedrice tkg persimmon 富小路やま岸 ミシュラン1つ星 京都ミシュラン ミシュラン一つ星 懐石料理 懐石 京都グルメ 栗饅頭 志野茶碗 お抹茶 煮えばな キンキ 西京焼き

Seared toro bowl (Japanese: 炙りトロ丼 aburi toro-don) with chū-toro (medium-fat tuna belly sashimi) and truffle oil. Thick slices of tuna are great seared, as there will still be a raw interior to contrast with the melted exterior. With some truffle oil and scallions this becomes a sublime flavor bomb (I like a little bit of tōgarashi sprinkled on top for spiciness as well)
