Have you ever made a London Broil? I had not but given the price I had to give it a try. Verdict? It turned out great, very juicy! Cooked at 180 for an hour and 45 minutes til 125 internal, then seared on each side for 2 minutes. Ended up 135 for a nice med rare. I’m not always the biggest fan of hot dogs, but one of my favorite dishes before going keto was patijinich Mexican Dreamboat Hot Dogs. Her dreamboat hot dogs are wrapped in bacon and then topped with a tasty sauce. I’ve been craving them lately, so I cooked up a few certifiedangusbeef bacon wrapped hot dogs and created a ketofied version of the dreamboat sauce. I wanted a super simple, flavorful, thick meaty chili to fill up our omelets tonight, so here’s what I did: -22 ounces ground beef (used 1 of Costco’s grass fed beef packs) - 4.5oz melty beef chorizo (half a stick of Cacique brand) - 1 can Rotel tomatoes with green chiles (blended) - 3 tablespoons Valentina’s hot sauce - 1 tablespoon chili powder - 1.5 teaspoons cumin - 1/4 cup water - Season ground beef with salt, pepper, onion & garlic powder and cook in frying pan with chorizo until browned. Did I hit all my goals ? No. Am I going to walk up and down the stairs to complete them ? Nah. Worked outside in the 24 degree heat doing yard work for 4ish hours with my friend. Perception is everything! Why do some people succeed with goals while others repeatedly fail? Might it have something to do with the person's focus and where their attention stays? 🌮✨ CHEESE SHELL: Not sure why I waited so long to try this! I melted 1/4 cup of Monterrey Jack and Cheddar Mix from traderjoes on a sheet of parchment. Once melted, I popped it out of the oven and “folded” over a small cup to get the Shell shape. I blotted the excess grease and let cool. Once firm I loaded this baby with all my favorite taco fillings.
