Oh snap, I found some delicious pickles to bring with me for lunch at the office today. Cajun Shrimp Guacamole⁣⁠ -⁣⁠ Made by bevcooks. More on www.bevcooks.com bevcooks⁣⁠ ⁣⁠ Serves 4⁣⁠ ⁣⁠ 4 Tbs. Olive Oil⁣⁠ 1 Tbs. Cajun seasoning⁣⁠ 1 pound medium (or extra-large!) shrimp, peeled and deveined⁣⁠ 3 Hass avocados⁣⁠ 1/2 cup chopped red bell pepper⁣⁠ 1/2 cup thinly sliced scallions⁣⁠ 1/4 cup chopped yellow onion⁣⁠ zest of 1 lemon⁣⁠ 1 Tbs (or more to your liking) fresh lemon juice⁣⁠ coarse salt and freshly ground pepper⁣⁠ ⁣⁠ Use half the olive oil in a large sauté pan over medium-high. Add 1/2 Tbs. of the Cajun seasoning to the butter/oil. Stir it all in. Add half the shrimp and sear on one side for 2 minutes. Flip and sear another minute or so. Season with salt and pepper. 2016 vs 2109 What's changed here? Well I weighed 15 pounds LESS in 2016 than I do now, but the internal transformation is what I'm talking about! I lost a whopping 260 pounds when I got divorced. Back then I thought I might have been happy happy enough? Now, you can look at me trying on that dress and SEE that I'm happy. No question about it. I've been working on my internal transformation just as long as I have been working on the external. This last year my focus shifted from losing weight to simply living the best life I can. I don't talk obsessively about keto anymore. Don't get me wrong I still talk about it, but it isn't part of my identity anymore. Happy tranformationtuesday ✨ • June ➡️ July! In addition to keto, I’ve been doing pilates 4-5 times a week and I’ve definitely started noticing a difference in my stomach and arms already😊 • These last 2 months have been a little difficult since I’ve been off and on keto between vacations and drunk eating. I’ve been having a lot of anxiety about going away again at the end of this week 😣 I’ll be in California with one of my close friends and it’ll be the longest I’ll be off keto (10 days). I know I’ll hop back into it once I get back, but I always have this fear of gaining all my weight back instantly😣 anyone else? I’ve kept myself off the scale lately and I will probably continue to do that until the end of summer once I’m really back into eating a strict ketogenic diet. • On a more positive note, I’m so happy to have found a fun way to get my work out in! Day ☝️ back at the gym today. It took alot for me to go. Excuse after excuse. Those with anxiety know how hard it is to do certain things. For me, going to the gym “alone” is torture. At least until it becomes a habit then I can go alone. There’s just something about being uncomfortable and feeling like every eyeball is on you. I’m sure some of you can relate??? 👀 Stupid, mind games. So, all we have to do is kick it’s butt & go back tomorrow! Go get it & stop making excuses! It’s so easy to find excuses! I could give advice ALL day long but I sure have a hard time taking it myself. Sooo, tomorrow I’m going to put my 👟👟 back on and go after it again. It’s all about overcoming your fears. Take baby steps! Everyday is a new day Some days won’t be so great & that is ok you know why? You have TOMORROW! For example, I tried keto SO many times and cheated eating this or drinking that. I said “I want to see what happens when I don’t make excuses”. Then 💥 bam, I stuck to Keto for 4 months and lost 32 pounds. It’s just a lifestyle. A choice. A habit. Don’t make another excuse! Do this for you! Rather it be about the gym, school, making friends, work, relationships, etc. Whatever your “scared of” overcome it! Air Fried Steak and Asparagus Bundles By bellalimento INGREDIENTS 2 - 2 1/2 pounds Flank steak - cut into 6 pieces kosher salt/black pepper 1/2 cup Tamari sauce 2 cloves garlic - crushed 1 pound asparagus - trimmed 3 bell peppers - seeded and sliced thinly 1/4 cup balsamic vinegar 1/3 cup beef broth 2 tablespoons unsalted butter Olive oil spray INSTRUCTIONS Season steaks with salt and pepper. Place steaks into a large zip top bag. Add: Tamari sauce and garlic. Seal bag. Massage steaks so that they're completely coated. Transfer to refrigerator and allow to marinade for a minimum of 1 hour up to overnight. When ready to assemble, remove steaks from marinade and place on a cutting board or sheet. Discard marinade. Equally divide and then place asparagus and bell peppers into the middle of each piece of steak. Roll steak around vegetables and secure with tooth picks. Preheat air fryer. Working in batches, depending on the size of your air fryer, place bundles into basket of air fryer. Spray vegetables with olive oil spray. Cook at 400 degrees for 5 minutes. Remove steak bundles and allow to rest for 5 minutes prior to serving/slicing. WHILE steak is resting, into small-medium sauce pan heat: balsamic vinegar, broth and butter over medium heat. Whisk to combine. Continue cooking until sauce has thickened and reduced by half. Season with salt and pepper. Line a muffin pan with 12 silicone or parchment paper liners. 2. In a medium saucepan over medium heat, combine the raspberries and water. Bring to a boil and the reduce the heat and simmer 5 minutes. Mash the berries with a fork. 3. Stir in 2 to 4 tbsp of the powdered sweetener, depending on how sweet you like it. Whisk in the grassfed gelatin and let cool while preparing the peanut butter mixture. 4. In a microwave safe bowl, combine the peanut butter and coconut oil. Cook on high for 30 to 60 seconds, until melted. Whisk in 2 to 4 tbsp of the powdered sweetener, depending on how sweet you like it (I only use 2 tbsp). 5. Divide half of the peanut butter mixture among the 12 cups and set in the freezer to firm up, about 15 minutes.
