celebrating taco tuesday tonight with this bombbbb paleo tortilla soup 🥣 seriously this stuff is becoming a request around here! it’s so comforting, tasty, full of nutrition, and eveeeeen better the next day as leftovers! YUM!
2 organic boneless skinless chicken breasts
1 1/2 tsp pink salt
1 large can of organic/no sugar added diced tomato
2 cups chicken broth epicbar
1 medium onion chopped
2 tsp garlic powder
1 tsp onion powder
1/2 tsp cayenne pepper - optional
1 tsp cumin
2 tsp chili powder
1 tsp dried oregano
1 tsp paprika
dash of pepper
2 zucchinis sliced and cut into half moons
1 cup spinach organicgirl
1 14-ounce can of coconut milk/coconut cream
1. mix everything together in instant pot except for coconut cream. cook on high for 18 minutes w valve sealed. at the last 10 min mark move valve to unsealed - let decompress. remove lid.
2. add coconut cream and stir. change instant pot setting to sauté and stir until mixed together.
3. serve and add garnishes micro greens, red onion, broccoli sprouts, cilantro, lime, avocado, jalapeño, shredded cheese, and/or sietefoods tortilla chips!
