One of my favorite breakfasts has to be overnight oats. At the weekend I tried out chia seed, banana, & blueberry overnight oats. 👌 ❤️ Ingredients 1/2 cup of porridge oats 2 tbsp chia seeds 1 cup Almond milk 2 tsp cinnamon 1/2 banana sliced 1/2 cup of blueberries/raspberries ❤️ 👌 Toppings Almond butter Almond nuts Coconut 🥥 Pureed berries Pumpkin/sunflower seeds Cacoa nibs ❤️ 👌 Depending on your preference & time you can either mix all ingredients together in an air tight container including toppings & leave in fridge overnight. ❤️ 👌 Otherwise mix the oats, almond milk chia seeds, & cinnamon together and add your toppings in the morning. ❤️ 👌 I decided to do chia seed as they have so much nutritional value. It’s an excellent plant based source of omega essential fatty acid, it’s high in protein, & it’s full of vitamins, minerals and fibre. It’s also high in magnesium, iron, calcium & antioxidants. This is my client Lee. She started training with me last year, coming to the group fitness classes as part of her New Years Resolution and then going on to do PT sessions as well. - She has always had knee issues her whole life, suffering from 'banana knee' which is an involuntary hyperextension of the knee joint that had bothered her for years. She would occasionally have flare-ups but nothing too serious. - As her knee began to worsen late last year it became apparent that the issue went beyond what was initially thought, and scans revealed that she had a displaced patella (knee cap), severe recession of the cartilage between the knee joint and the patella, and several cysts beneath her patella 😥 - This means she now has to have surgery and obviously lower body exercise is now out of the question. Most people would have just given up and sat on the couch waiting for surgery- but not Lee. She in fact increased her number of PT sessions per week, and we now work around her injury- still getting in 3 strength and conditioning sessions per week focusing on her upper body. - Getting an injury does not mean that you have to give up training completely. There is always alternative movements you can do to work around, not through, the injury or issue. - Massive shout out to Lee for not taking the easy way out, and for working harder than ever. How my weight fluctuation looks when i started my strength recovery and weight loss since January. All big spikes are my weight increases after 1 per week cheat meal on Sunday night.
