Radicchio can arguably be a bit hard to track down but a kind friend gave me some (thank you charlotterowegardens) and so an opportunity for red wine and radicchio risotto. Pan fried scallops are great with this; orange and thyme add background fragrance and enhance what is already a very elegant dish. Soaking the radicchio in ice cold water before adding it to the risotto helps temper its sometimes overpoweringly bitter flavour. C’est au début de l’hiver qu’il commence à déployer sa palette de couleurs et d’amertume. Jusqu’au printemps, le radicchio fait partie des rares légumes feuilles à égayer nos assiettes. Descendant de la chicorée sauvage (Cichorium intybus), développé et cultivé en Vénétie (Italie du Nord) où le climat lui est propice, le radicchio était apprécié des Romains pour ses vertus curatives. On cuisinait les racines comme des légumes et, au xviie siècle, pour remplacer le café. Il existe désormais cinq IGP ­(indication géographique protégée) aux formes, nuances et goûts aussi élégants qu’étonnants : rosso di Treviso précoce aux ­longues feuilles et nervures blanches, di Chioggia pommée et fripée, Rosa di Verona aux froufroutantes déclinaisons de vieux rose, pêche et autres couleurs de robes de bal, variegato di Castelfranco aux feuilles jaune pâle tachetées de rouge… Autant de verdures doucement amères et croquantes, que l’on ne saurait réduire à des salades. La plus chic étant la rosa di Gorizia, cultivée dans le Frioul, semblable à une rose rouge grenat qui s’arrache pour 25 à 30 euros le kilo. Pas étonnant : ce radicchio, dont les semences se transmettent en famille, met près d’un an à atteindre sa maturité, d’abord en terre puis selon une technique de forçage qui adoucit son goût et sa texture. À l’Osteria Ferrara, la rosa di ­Gorizio est escortée de burrata et d’une vinaigrette à la grenade. Chez Tempilenti, les radicchios enveloppent tendrement cervelle ou foie d’agneau grillé. Quant à la cuisinière brésilienne Alessandra ­Montagne (Tempero), elle les assaisonne de goûts d’ailleurs, avec vinaigre de noix, sauce soja et saumon cru mariné au miso. If you would ask me what's the most common food I eat every day, I would have to say it's risotto. Why? It's incredibly delicious, it's very healthy to eat, easy and quick to make in less than 20 minutes, it's cheap to prepare as you can make it with almost any seasonable vegetable you have. Tonight I made risotto al radicchio. For one portion I used a small coffee cup of rice, a handful of chopped radicchio, a small coffee cup of grated parmesan style hard cheese, 4-5 small coffee cups of water, a sprinkle of milk, a sprinkle of oil, a pinch of salt, half a tea spoon of universal seasoning. You drop everything except the parmesan in the pot, you cook it for about 13-15 min till the rice is ready, on not too high temperature, mixing it often. Then 2-3 min before the rice is ready you add the parmesan and you mix it in the risotto.
