Potato Bean Rösti Patties🤩✨ Another ridiculously easy and totally delicious recipe that’s just perfect for serving with giant salads and avocado, or throwing on the BBQ🙌🏼
A little fun fact for you: Potatoes are the number one most satiating food on the planet!🌏 There are a lot of myths about potatoes, but almost all of them are plain rubbish tbh.
Potatoes are a great source of complex carbs, prebiotic fibre for great guthealth, potassium, vitamins C + B6, magnesium, antioxidants + the list just goes on.
Plus they’re cheap, versatile and delicious. What’s not to love?💁🏼♀️
300g pre-cooked potato
200g black or adzuki beans
1 spring onion, sliced
Handful of fresh coriander, chopped
Handful of fresh parsley, chopped
2 tsp Dijon mustard
1 tbsp Nutritional yeast
1/2 tsp black pepper
1 tsp each garlic and onion powders
A pinch of cayenne pepper
1️⃣Preheat your oven to 200°C and line a tray with baking paper.
2️⃣Peel potatoes + mash with a fork, then add in all remaining ingredients and mix well.
3️⃣Using your hands, form into patties and place on baking tray. Bake for about 20 minutes until golden.
