Lentil & Spinach Soup 🍲
I love lentils! Besides tasting good, they are low in calories, and rich in iron and folate. Nutrients we all need. My super easy and healthy lentil soup recipe.
-2 Cups Dried Brown Lentils, rinsed and drained
-4 cups Vegetable Broth
-4 cups Water
-1/2 Yellow Onion, diced
-2 cups Celery, diced
-2 cups Carrots, peeled and diced
-1 cup Baby Red Potatoes, peeled and diced
-3 Cloves of Garlic, minced
-14 oz can of Diced Tomatoes
-4 cups Spinach
-1 Tbsp of Olive Oil
-2 tsp of Italian Seasoning
-1/4 tsp Salt
-1/4 tsp Pepper
-Cayenne Pepper (optional)
-Salt and Pepper, to taste
—Heat up a large pot over medium heat. Add olive oil once the pot is hot and after the oil heats add in onions, celery, carrots, and potatoes. Sauté for 5 minutes until soft.
—Add garlic, Italian seasoning, and salt & pepper. Mix well to coat all the veggies for 1 minute.
—Add lentils and mix. Add diced tomatoes and mix. Add vegetable broth and water and stir all the ingredients.
—Cover and bring to a boil. Once it comes to a boil lower the heat and simmer for 45 minutes-1 hour.
—After 1 hour add in cayenne pepper, salt & pepper to taste.
—Turn off heat and add the spinach. Stir for a few seconds until wilted.
—Serve and Enjoy! Store in the fridge for 3-4 days or it is good to freeze also.
