Last night’s dinner was spinach ravioli (by Waitrose) and home-made creamy butternut squash stew. Method for the stew: heat a medium sized pot or skillet and add 1 tbsp of rapeseed oil. Add 1 chopped white onion, ground garlic, black pepper, pinch of salt and leave until the onion has softened. Then add 1 tin (400ml) coconut milk, 200ml chopped tomatoes and Italian mixed herbs, stirring regularly. The sauce should start to thicken. Add some ground paprika, a little more garlic, a handful of chopped chestnut mushrooms and diced butternut squash & sweet potato. Leave on a low-medium heat for 30 minutes or until the butternut squash is soft. Who believes that necessity is the mother of invention? So I’m working on this no meat thing as part of my health journey and it’s so exciting. What it means is that to stay disciplined I’ve had to consistently create different meals, go to different restaurants and so on. Voilà une recette que j'ai découverte récemment et qui est délicieuse. Les œufs brouillés aux épinards et lait de coco (ou crème de coco) et parfumé au curry. Ici servi avec des crudités carottes et chou rouge de l'huile Omega 3 du vinaigre balsamique des graines de sésame et de courge. Et sous les œufs brouillés il y a du riz complet, que j'avais pré trempé avant cuisson La recette pour 2: 4 œufs 200 à 300 gr d'épinards frais 15 cl de crème de coco (ou lait de coco) Une échalote De l'huile d'olive Curcuma, gingembre, curry, un peu de poivre. Faire revenir dans l'huile chaude l'échalote (coupée en petits morceaux) et les épices, pendant ce temps émincer les épinards. Une fois l'échalote dorée ajouter les épinards. Laisser fondre quelques minutes. Une fois que les épinards ont diminué de volume ajouter les œufs battus avec la crème. Remuer sans cesse avec une spatule en bois jusqu'à ce que les œufs soient pris.
