Last night, in an effort to cool myself off from the rising humidity, I dug into a treat that I had stashed in my freezer. This is the limitededition peppermintstick icecream from friendlys . I was CRAVING a quesadilla. So I found some tortillas that were 2pts per tortilla and used low fat mozzarella to make something that lasted on my plate for about 20 seconds. It hit every single craving I was having 😋 7 points of heaven I actually made this last night too. But tonight I chopped up the chicken and tossed it with the cheese and some spicy green salsa before dumping it on a tortilla in the skillet. Then I topped it with two tblsp of guacamole and some salsa The first pic is round two, which was perfection. The second is my first attempt that was slightly dry and the tortilla was over cooked. One of my favorite pre-training meals? Honestly? The truth? Fried rice. "Uh, what?!" Yes my friends. Fried rice with egg, pork or chicken, and veggies. Why? Eating those carbs 2ish hours prior to aerial class = energy surge. The protein keeps it from wearing off too quickly. The veggies are something I add bc I like them and vitamins/minerals. And honestly, the meal tastes good. I eat to a comfortable fullness for myself, and I'm good to go in 1.5-2 hours. Do I do this all the time? No. But when I do, I notice the difference. Every Wednesday night, my wife goes to a knitting class, so I’m free to eat on my own. The new rice roll place I wanted to try was closed, so I went to another new place on Eldridge Street, although it’s a completely different kind of “rice roll.” It’s like a burrito made with purple sweet rice. I bought two of them and went to the nearby park where old Chinese people are usually dancing and gambling. Today, men and women were playing soccer. At one point, the ball rolled over to an old Chinese man standing and watching the game. He had a mischievous expression on his face and looked like he was about to kick the ball even though one of the players had already caught up to it. The girl told him to step aside, and the man reluctantly did. The first time my wife attended the knitting class, I went by there to pick her up after the class because the weather was nice and I felt like taking a walk. I said hello to everyone, and apparently, all the ladies thought I was the sweetest man escorting her back home. We giggled on the way home because that is so antithetical to who I am. The following week, I decided to maintain that fictitious persona among these ladies. Now, I pick her up every week. One does not need to believe in what one is doing in order to reap the benefit of it. Tonight, I was early. I decided to kill time by going to Tompkins Square Park and sat on the same bench I used to spend hours on by myself after my first wife left me. That was like 25 years ago. The view from that bench hasn’t changed much. I felt scared a bit that I might slip back in time. Outside of the park, the scene is entirely different. Avenue A is now owned by the current 20-somethings. I remember the days when my generation owned the same avenue, although I didn’t realize then that we owned it. One of the few establishments still standing from my days was Side Walk Cafe but I was shocked to find it now shuttered. I peeked into the knitting store from the sidewalk to make sure that the ladies saw my face. It’s one of the few retail businesses in the East Village that cater to people of all ages. We walked home to meet our daughter and dog half way.

Happy Wednesday everybody! I wanted to share this recipe I found a few days ago. I finally made it yesterday and it is AMAZING🤤⚡️! It is one of those recipes that you will probably make over and over again. Seeds are so good for you! Pumpkin seeds are a good source of iron, chia seeds are full of antioxidants and sunflower seeds have magnesium and selenium. All these seeds are excellent for your hormones. Try these super seed coconut clusters, it is a delicious snack or dessert and they just look gorgeous! You will need: •1 1/2 tbsp chia seeds •1 1/2 tbsp water •1 1/2 coconut chips unsweetened •1/2 cup sunflower seeds •1/2 pumpkin seeds •4 tbsp maple syrup •pinch of salt Whisk water, maple syrup, salt and chia seeds. Let sit for five minutes to thicken. Preheat oven to 325F. In a medium bowl combine coconut chips, sunflower seeds and pumpkin seeds. Add the thickened chia mixture. Fold everything together. Line a baking sheet with parchment paper. Add one heaping tbsp scoop of mixture and gently press with spoon to flatten. Bake for 18-20 mins until coconut turns brownish but not burnt. Remove from oven and wait about ten minutes before transferring. Enjoy!✨ (recipe by plantphilosophy)
