Oyster Mushroom & Spinach Orecchiette with Garlic and Lemon
Orecchiette Pasta, Oyster Mushrooms, Olive Oil, Garlic, Spinach, Lemon, Black Pepper, Shaved Parmesan Cheese.
(1). Pour ¼ cup of olive oil in a small pan and heat until warm over low heat, (about 2 minutes). Only warm the oil. Remove from the heat and add 3 diced + smashed garlic cloves. Let it sit for at about 20 minutes.
(2). Add pasta in a pot of boiling water with salt. Let it boil for 10-13 minutes.
(3). Heat the remaining tablespoon of olive oil in a deep skillet on medium heat. Add the mushrooms and cook for 3 minutes, until they become tender and releases liquid. Add 6oz of the spinach and cook for 2 more minutes, until wilted.
Stir in the pasta and cook for another minute. Remove from the heat and stir.
(4). Next, pour the diced garlic and oil over the pasta. Add the lemon zest, lemon juice, salt, and pepper. Toss all ingredients to mix well.
